Favorite Moroccan Dish

How could I blog about my experiences while in Morocco without including the food!

Although Morocco is known for things like their leather goods and oils, in my opinion, the best part of the trip has been the different foods and fish tajine steals the show!

 

For the holidays, try adding a different flavor to the mix and try the Moroccan fish tajine. Below I have written out the recipe, courtesy of my host-mom, for her delicious meal!

 

Ingredients:

Fish

Potatoes

Tomatoes

Red and Orange Peppers

Carrots

Cucumbers

Salt

Olive Oil

Basil

Lemon Juice (freshly squeezed)

Paprika

Cumin

Cinnamon

 

Instructions:

 

Preheat oven to 250 degrees and oil the bottom of the pan

Place paprika, cumin, cinnamon, salt, olive oil, tomatoes and basil in a bowl. Mix together.

Cover the fish with the mix

Slice peppers, potatoes, and carrots in thin slices.

 

Place potatoes on the bottom of the pan.

Place the season fish on top.

Squeeze lemon juice over the fish. Then place peppers, carrots, cucumbers on top of fish.

Cover with foil and place in oven for one hour.
