IES Abroad Quito students had the unique pleasure of learning firsthand how to prepare Empanadas de Viento as one of their last activities of the semester. We simply couldn't resist sharing the recipe for this Ecuadorian delicacy—sure to be a crowd pleaser at any holiday soiree! Also delicious for breakfast or as a snack, paired with coffee. ¡Que aproveche!
Empanadas de Viento (Wind Turnover)
1 cup of flour
1 tablespoon butter
1 teaspoon baking powder
1 teaspoon salt
1 cup warm water
½ grated mozzarella cheese
Oil for frying
In a bowl, mix flour, baking powder, salt and butter by hand. Add warm water gradually, until the dough is done and it releases easily from the hands. Divide into 5 portions.
Roll out the dough with a rolling pin into a circle. In the center add 1 tablespoon of cheese. Moisten the edges. Fold in half. Close and press edges with a fork. Heat oil in a deep pan and fry 2 empanadas at a time. Leave until one side is browned and then flip.
